Earlier this spring we were able to fulfill a longtime goal of ours; sending our chef, Will Harper, on a research trip to Japan (his first!).
From hanging out with business guys (salary-man) over late night chicken sashimi in Tokyo yakitori shops to being repeatedly overwhelmed by the most amazing seasonal kaiseki dinners in Kyoto, Will put together a trip for himself to make any enjoyer of food jealous beyond belief. We have been eating the little dried fishes and sesame furikake that he brought back as souvenirs with almost all of our dinners at home…
It is great having Will back, and we are eagerly waiting to see what his experiences in Japan bring to the kitchen at Biwa.
